French Apple Cake





I was thinking yesterday when I was eating this cake and sitting by the window enjoying the rain: life should be like this cake: sweet, simple and comforting with a dash of vanilla :)

Kemarin ketika saya sedang mengunyah kue ini dan duduk di dekat jendela sambil menikmati hujan, saya berpikir: hidup seharusnya seperti kue ini: manis, sederhana dan nyaman, dengan sedikit taburan vanila :)

French Apple Cake
Recipe from David Lebovitz

3/4 cup (110g) flour
3/4 teaspoon baking powder
pinch of salt
4 large apples, I used local apples: manalagi and anna apples
2 large eggs, at room temperature
3/4 cup (150g) sugar
3 tablespoons dark rum
1/2 teaspoon vanilla extract
115g butter, salted or unsalted, melted and cooled to room temperature

Preheat the oven to 350ºF (180ºC) and adjust the oven rack to the center of the oven.
Heavily butter an 8- or 9-inch (20-23cm) springform pan and place it on a baking sheet.
In a small bowl, whisk together the flour, baking powder, and salt.
Peel and core the apples, then dice them into 1-inch (3cm) pieces.
In a large bowl, beat the eggs until foamy then whisk in the sugar, then rum and vanilla. Whisk in half of the flour mixture, then gently stir in half of the melted butter
Stir in the remaining flour mixture, then the rest of the butter.
Fold in the apple cubes until they’re well-coated with the batter and scrape them into the prepared cake pan and smooth the top a little with a spatula.
Bake the cake for 50 minute to 1 hour, or until a knife inserted into the center comes out clean. Let the cake cool for 5 minutes, then run a knife around the edge to loosen the cake from the pan and carefully remove the sides of the cake pan, making sure no apples are stuck to it.
Serve wedges of the cake just by itself, or with crème fraîche or vanilla ice cream.

It is very nice to enjoy it when it rains, with a cup of warm tea on the side!

Cake Apel Perancis
Resep dari David Lebovitz

3/4 gelas takar (110 gram) tepung terigu
3/4 sendok teh baking powder
satu cubit garam
4 apel besar, bisa berbagai jenis, saya menggunakan apel lokal: apel manalagi dan apel anna
2 telur besar, di suhu ruangan
3/4 gelas takar (150 gram) gula
3 sendok makan dark rum, kalau tidak ada rum atau anda menghindari alkohol, bisa tidak dimasukkan rum nya dan diganti dengan menambahkan ekstrak vanila menjadi 1 sendok teh
1/2 sendok teh ekstrak vanila (terbuat dari biji vanila asli, bukan bubuk vanilin yang berwarna putih)
115 gram mentega, dicairkan, lalu ditunggu dingin sampai suhu ruangan

Panaskan oven ke suhu 180 derajat celcius.
Olesi dengan mentega loyang kue dengan dasar yang bisa dilepas dengan diameter 20-23 cm
Di mangkuk kecil, campurkan tepung terigu, baking powder dan garam.
Kupas dan hilangkan bagian tengah apel, lalu potong2 dadu sebesar 3 cm.
Di mangkuk besar, kocok telur sampai berbusa lalu masukan gula lalu rum dan vanila. Masukkan setengah dari campuran tepung terigu lalu masukan mentega cair. Masukan campuran tepung terigu yang tersisa lalu mentega cair yang tersisa.
Masukkan potongan apel lalu aduk sampai rata. Masukkan ke loyang yang sudah disiapkan.
Panggang selama 50 – 60 menit sampai matang.
Hidangkan cake begitu saja atau dengan crème fraîche atau es krim vanila.

Asyik sekali dinikmati ketika sedang hujan dengan secangkir teh hangat!
