Baby Zucchini and Ricotta Square Galette

Baby zucchini.
Ricotta.
Puff pastry.
Marimekko.
Let’s do it!
Oven to 200C. Bring out the puff pastry sheet from the freezer (bought mine frozen, no big deal :) Mix 100g of fresh ricotta with 1 egg, one tablespoon of flour, a pinch of salt and a dash of black pepper. Cut 250g of baby zucchini. Spread the ricotta mix on the puff pastry, leave 3 cm border. Arrange the baby zucchini on top. Sprinkle with freshly grated parmigiano. Fold the edges. Bake for 30 minutes or until golden.
Easy.
Delicious.

Loved it! Made two, one for me exactly like this and one for Mr Boyfriend with added bacon because he would never have approved no-meat dishes (pfff…). I wasn’t sure how much salt I should have put so mine ended up needing a bit more salt and his was perfect because of the bacon. So I put black olives on mine. Yummy!
Yeah I’ve neglected the blog for a while. I’ll update it the soonest chance I’m actually sitting down doing things for myself. Life is super hectic. How are you, Eva? Merry Christmas and Happy New Year. I might be around Ubud this weekend. Would you like to meet up? :)
