Chocolate Hazelnut Muffins



I am back after a week in Singapore! With cold. Blocked nose. And a desire to make and eat…muffins :) Yeah, right! Again?
Well, the thing is, I love love love making muffins and I love love love eating them, especially mini muffins.

Chocolate Hazelnut Muffins

Makes 16 mini muffins
Listening to Apply by Glasser. In loop.
Prepare
Oven 180C
Then
3/4 cup of flour
2 tbsp of dutch cocoa powder
1/2 tsp baking soda
1 tsp baking powder
Sift to one big bowl
Then add:
1/4 cup ground hazelnut
Vanilla bean from 1 vanilla pod
1/4 cup sugar
A pinch of sea salt
Set aside
Get another bowl
Add:
1/4 cup yoghurt
1/2 cup fresh milk
1 small organic egg
1/4 cup coconut oil
Mix
Add to the dry ingredients
Mix lightly, until the ingredients just incorporated
Do not over mix
Roughly chopped:
16 hazelnuts
50g semisweet chocolate (58%)
or.
I guess you can also chop one bar of silver queen chocolate (childhood! ha!)
Add to the mixture
Very lightly mix
Butter and flour the muffin pan
Scoop the mixture to the pan
More or less
25 minutes
Done
