Simple Pasta Salad

The first post on the new domain! I know I should have made something more special, but, I just want to be honest, and post thing that I really do and eat everyday. And since these days have been so hot in Ubud, we’ve been eating mainly cold food and salad. I haven’t really posted any pasta salad recipe here, so I thought I would start with this simple one we ate yesterday. This is very simple, so the two important thing are: good quality extra virgin olive oil and good organic tomatoes.
Simple Pasta Salad
Serves 2-3
200g short pasta (I like to use fusili, but I only had the children pasta in car and building shapes :), cook until al dente, drain ,set aside
A handful of fresh cherry tomatoes, preferably organic, chopped
One tin of tuna, drained
Some green olives, chopped
1 tbsp of capers
Fresh basil leaves
Extra virgin olive oil
Sea salt and pepper
Toss all ingredients together in a big bowl, drizzle with extra virgin olive oil and season with sea salt and pepper and serve
I like to have this with fresh ciabatta bread
